The traditional balsamic vinegar of Modena, Italy, is made from "Trebbiano" and "Lambrusco" wine and juicy grapes. After drying the grapes in the sun, they are slowly crushed and then boiled in large copper kettles. The concentrate is naturally matured in small oak casks.
