From the best that the island of são jorge has to offer, we have created for centuries a distinct cured cheese, of hard paste, being a drier cheese. São jorge dop cheese with 24 months of maturation is a product with a strong, clean and slightly spicy aroma, obtained from raw cow's milk, salt and rennet. For having these characteristics, it is perfect to compose a cheese board and to accompany it with a liqueur wine or with a younger port.
