The grapes for this wine come from very old vines (over 90 years old). They are fermented for 5 to 8 days in an open mill and without destemming (the berries are not removed from the bunch). Afterwards, a reassembly is made with wooden masses, several times a day, until they reach the correct intensity. The wine then finishes fermentation in old wooden barrels. While resting, it is cleaned and aged in the same vats for about 18 months. It is bottled without any gluing or filtering. All these processes are done manually. It is a wine that is only produced in years of exceptional quality.
