Heart of palm is a vegetable harvested from the inner core and growing bud of certain palm trees, most notably the coconut, juçara, açaí palm, palmetto, and peach palm.
It is in salads that the palm heart finds its greatest use. In the form of cutlets cut in halves or quarters, sliced or even chopped, it ennobles the dishes. Suitable for topping pizzas, it is also an ingredient for filling pies, pies, pastries, cold pies and soups.
The heart palm has high nutritional value and few calories, fiber and still contains calcium, magnesium, phosphorus and vitamin C in addition to a good amount of potassium.
