Already in the century. XVI, Gaspar Frutuoso, Azorean historian, priest and humanist, referred in his chronicles that “…the milk is very thick and thus makes a lot of butter, and nowhere do they give more cows…”.
Its characteristic colour and aroma come from pastures, rich in beta-carotenes, on which the cows feed freely.
