Carolino rice is the most appropriate for the traditions of Portuguese gastronomy, with its creaminess and velvety texture, it absorbs the aromas and spices with which it is cooked. It is used in maladrinho rice and wet and thick rice dishes, as well as, desserts such as rice pudding.
The Agulha rice has its origins in Southeast Asia and has a fine, long, and consistent grain. It cooks quickly but without absorbing so much seasoning, for a result of loose and dry rice. It is used in meat and fish side dishes (the traditional "white rice").
